Clean Eating with Vegetables: The Cleanest Way to Eat
Clean Eating with vegetables makes up a large part of the HOLISTIC NUTRITION. Vegetables contain important substances, that our good intestinal bacterias need. Ideally the vegetables are from biodynamic cultivation, grown naturally in the sun and on good soil, freshly harvested and fair traded and distributed.
Vegetables are ideal for purifying, detoxifying and losing weight. Veggies are rich in minerals, vitamins and fiber and bioactive substances, which magically stimulate our metabolism. For easy digestibility, the vegetables should be cooked or sautéed in ghee or in good vegetable oil with little rock salt and spices until soft boiled.
Clean Eating with vegetables also includes avoiding nightshades such as tomatoes, spinach, chard and potatoes. They contain solanine, an acid that, according to the holistic teachings of Ayurveda, can irritate the body. Clean Eating also means, not to add anything, which is heavy to digest like cheese.
Clean Eating with VeGetables: Cauliflower rice
Do you want to lose weight or just feel like cleansing and detoxifying? Then clean eating with vegetables is just right for you. It’s best to completely avoid carbohydrates and starches, especially rice, and replace it with cauliflower. Cut it into very small pieces, so that it looks like rice. This decreases the cooking time which preserves vitamins, especially the B-Vitamins. Cook the cauliflower with Ghee, a small amount of rocksalt and water for about 40 minutes. Add some jeera seeds and curcuma to it.
Serve it to currys of your choice or to meat, fish, eggs and vegan products without cereals. This could be millet, quinoa or chickpeas in form of falafel or hummus. Use chutneys and pesto as dips: Best are selfmade dips.

Clean Eating with Vegetables: Artichokes
Artichokes are extremely good for the liver. The bitter substances like Cynarin, Flavonoides and Polyphenole are stimulating the production of bile in the liver. This way the liver is cleansed and the digestion is activated. Just cut the stem and boil it with Ghee, salt and water. The tip of the leaf gets very soft. You can eat it with vegan dips like vegan Aioli. You see, Clean Eating with Vegetables are very easy to prepare.

With Beetroot you can also create fantastic veggie dishes. Simply take pre-cooked beetroot and grate them. Fry mustard seeds in a small pan with sesame oil and add them to the beetroot. Add chopped dates, lots of fresh rocket salad and herbs like Dill or Koriander and pieces of walnuts – if you like. This typical ayurvedic vegetable dish contains lots of iron and is perfect for detox and weight loss. It tastes perfect with hummus, which you mix with a little olive oil and water.
