In HOLISTIC NUTRITION we try to eat as much Superfoods as possible. We talk about natural food items, which contain a lot of valuable vital substances, such as essential amino acids and fatty acids, which build up our tissues like muscles, bones or nerves. They also contain high amounts of minerals, vitamins and bioactive substances that stimulate metabolism. Superfoods are also known as staple foods from all over the world. 

SuperfoodS: Rocksalt

There are Superfoods, which are underestimated or even discriminated like salt. The unraffined salt contains so many essential substances which our body needs. There are many different types of salt from different parts of the world. Rocks are the best source for salt as it derives from primeval mountains. Therefore it contains lots of minerals and trace elements. In addition to sodium chloride, the salt contains everything in mineral form that was alive at the time the rock was formed. 

The main benefit if salt is not only that it makes food more tasty, but all the minerals and trace minerals are necessary for our metabolism and health of our tissues like Calcium for bones or Potassium for the heart. Himalayan Salt is one of the best Superfoods and comes from an ancient mountain range from Pakistan. There are other great sources of rock salt. Sea salt is high in iodine and contains less mineral. Everyone, who lives inland, should consume some of these salts daily.

Healthy Superfoods: Fava Beans

They come from the Mediterranean and contain many valuable proteins. The superfood I’m talking about are fava beans, also known as broad beans or broad beans. They belong to the legumes. They are also rich in vitamin B1, iron, copper, phosphorus, folic acid, potassium, manganese and magnesium. This makes them a great alternative to soybeans as a source of protein and vital nutrients for vegans.

A great alternative to potatoe mash is puree from Fava beans. They contain less calories and more proteins than the potatoes puree. Just boil the beans for at least 4-6 hours with olive oil and little salt unless they are softboiled. Mash them in a mixer and serve the puree hot. Fava bean mousse is also great for weight loss with grilled vegetables.

Yolk is considered to be one of the best Superfoods. It contains fatty acids, which are necessary to build our hormons or restore our nerves. It is also rich in minerals and vitamins like iron and B-vitamins. Eat only one yolk per day, especially when you are exhausted and your digestion power is strong enough. You can create a dip out of the yolk. My suggestion: selfmade Aioli.

The yolk is better to digest than the egg white. If you have a weak digestion power, you better avoid the egg white, because it is heavy to digest. The protein structure is very complex and not everyone has the digestion power to break it into their smallest structures. Only if these proteins are minimized to molecules in the small intestines they can enter the blood. Otherwise they will be wrongly digested and creates health problems. 

The finest superfoods: mung beans

Story: The stars of the superfoods and an important component of the healing diet in Ayurveda because they are easy to digest when cooked. This is especially true for the peeled and halved versions – also called Mungdal. You can also grow sprouts from them, which are sometimes incorrectly called bean sprouts in this country. The starch is used to make glass noodles, which are easier to digest than the rice versions. 

Mung beans are part of the alkaline diet and contain many great vital substances such as essential amino acids, B vitamins, calcium and folic acid. Cooked with ghee or oil and vegetables, they make a complete meal with everything a person needs. Tiger nut come are from small roots nodules of the tiger nut grass, growing in Mediterranean regions. The gluten-free flour can be used for baking bread, cakes and cookies or as a binding agent. Cooked as porridge, they easy to digest. The delicious cereal alternative is very nutritious and rich in fibers. Therefore tiger nuts are great for our good intestinal bacteria. 

They also contain high levels of calcium, magnesium and potassium, which strengthen the muscles. They also contain digestive enzymes and B vitamins. They are part of the alkaline diet. A delicious milk can be made from tiger nuts, which is a delicacy in Andalusia.

Superfoods - the versatile Cashew Nuts

Cashew nuts originally come from Brazil. They are now widespread in India. They provide us with really good vital substances such as essential amino acids, vitamins A, B, D and E, potassium, copper, manganese and long-chain fatty acids. They ensure beautiful skin, teeth and eyes, stable bones and muscles and strengthen the metabolism.

They do not contain cholesterol, but phytoestrogens like isoflavones and lignin. Therefore cashew nuts should be part of the basic diet during and after menopause. A handful of unsalted cashews will nourish you for a few hours. Since they are very high in fat, if you are overweight only take a few nuts. You can also make milk from cashew nuts with water or ferment them and make wonderful vegan cheese.

Chia Seeds - the Super Superfoods

Chia seeds originally come from South America and were cultivated in pre-columbian times. The chia plant belongs to the sage plants. It is very nutritious and contains 10x more calcium than hard cheese. Chia is also rich in antioxidants, unsaturated omega 3 and 6 fatty acids. Perfect for sprinkling on food. Chia seeds are also available as flour. Since the seeds form a slime with a little water, the flour can be used as a gluten-free binding agent for baking bread, cakes and cookies. You can also use vegan milk to create a great pudding. With blueberries it tastes divine.

Must have Superfoods: Sesame Seeds

Sesame originally comes from Asia and is one of humanity’s oldest cultivated plants. It is considered as gold among seeds because it contains significantly more calcium than cow’s milk. Black sesame is the original form and contains a few more vital substances. The seeds are full of calcium, potassium, magnesium, phosphates as well as B vitamins, vitamin C and some iron. 

They are definitely part of the alkaline diet. High-quality oil can be pressed from the seeds, which can be heated to high temperatures. The sesame sauce, also known as tahini, which is widespread in the Orient, tastes delicious with vegetables and salads. Sesame bars with honey are a great snack.

Extra tip: Take a handful of sesame seeds or 3-4 tablespoons of tahina (sesame sauce) daily, instead of calcium tablets – good for prevention or for osteoporosis and general lack of vital substances.
